Some of our scrumptious food to try include: Indigo Grill is a warm and inviting restaurant with something for everyone.  The owners have taken great pride in starting this wonderful addition to Coral Bay and you can tell they care deeply for every guest’s experience, from the carefully chosen and handpicked decor to the quality and presentation of the cocktails and fare.  Craft Cocktails Enjoy uniquely crafted cocktails, like the Mango Margarita or the Bad Romance, or try to owner’s choice; the Loaded Corona.  Indigo prides itself on having fresh mint for the mojitos, so don’t miss out on those Berry Mojitos and Passion Fruit Mojitos either.  A welcome cool reprieve from the hot island sun! The bar itself is absolutely beautiful.  It is made of wood topped with varnished copper, truly unique and a perfect accent for this eclectic and relaxed vibe.  Menu The changing menu draws from many cultural influences with both classic and fusion dishes, and our warm, friendly, and entertaining staff help create a fun upbeat atmosphere which makes everyone feel right at home.  The staff and owners take great pride in creating dishes from quality ingredients – which can be difficult to find on an island.  They use Josephine’s Garden for greens and other produce, an organic garden just a stone’s throw from Indigo.  Local Seafood You will often find specials using local seafood from local fisherman.  One of the favorites, when available, is locally procured Caribbean lobster caught that day, by local divers.  All sauces, and many mixes are house made making and Indigo dinner a truly authentic dining experience.  They offer their Mahi, Salmon and Tuna three house made preparations you wont find anywhere else, using the central flavors of Tamarind, Mango or Honey to bring out the flavors of the fish.  Pizza Oh – and the PIZZA – wow!  Indigo Grill’s pizza is truly something special.  Cooked to perfection and with fantastic specialty pizzas like the Cryin’ Hawaiian or the Creole Muffalatta or you can always build your own, pizza is an amazing choice at Indigo.  Live Music Beyond the food, the cocktails and the fun vibe, once or twice a month Indigo has live music and a great dance scene always commences!  Whether it’s a local band or a band from the states, it always makes for a blast of an evening.     If you haven’t stopped by Indigo yet, you need to drop in, because you are missing out!     UPDATE: Following the aftermath of Hurricanes Irma and Maria, Mat and his team at St.John Catering report that they are working hard to re-establish operations. Mat is currently working on securing a new location for the business in Cruz Bay as both his business and home were destroyed in the storms. His goal is to have regular business hours beginning again in early 2018.     Locally Sourced Food Extra Virgin Bistro was named both for their location, in the heart of the Virgin Islands, and after extra virgin olive oil, a staple for Mediterranean cuisine which is the main influence for their cuisine. The dishes of Extra Virgin are inspirations from Italy, Greece, France, Spain and Portugal and include as much fresh and local produce as possible. At Extra Virgin Bistro we are dedicated to locally grown and sourced products, so much so that we grow most of our own herbs on site. We buy most of our fish from local fishermen and you will often find their names printed on our menu next to the fish they brought us that day.
